Oh interesting. My recipe calls for putting in the eggs after it reaches a boil and then boiling some more. I love love LOVE it, so if you ever decide to try a different CCP, let me know.

Mmmm... Coconut cream pie... the heroin of pies in my book. Our mom makes the most awesome CCP in the world. This year I requested it instead of a birthday cake, it's THAT good. Anyhoo... she makes hers with a meringue topping instead of whipped cream, which is also pretty good. Just a thought.

This pie looks absolutely amazing. I may try it sometime, but my own husband doesn't think a dessert is a dessert unless it involves chocolate...so I may be looking up your triple chocolate cookie recipe!

This pie looks scrumptious and it's just the ticket for my Mom on Mother's Day. A little trick I have when making pudding things is to pop the milk or half and half into the microwave to get it very warm but not hot enough to cook the eggs, just long enough to speed up the eternal "standing at the stove" time.
