This is a big, impressive, fast sandwich you vegetarians might enjoy. Those of you who find pleasure in hollowing things out will also have a good time with this. I recommend you eat this while watching Cash Cab and yelling out answers (I've often thought that each passing day is one day closer to Jeff and I finding ourselves in the Cash Cab). Just have a whole lot of napkins on hand; this sucker is sloppy.
It's a Rachael Ray recipe. You can get a lot of the ingredients at your supermarket's olive bar, if it has one.
INGREDIENTS
- 1 loaf crusty bread, 9 to 12 inches in length/diameter
- 1/4 C Italian parsley, chopped
- 1/4 C sun-dried tomatoes in olive oil, drained and chopped
- 1/4 C Kalamata olives, chopped
- 1/2 C pesto, store bought or homemade <-- I used a bit more than this; wanted to clean out the container
- 1/4 lb deli-sliced provolone cheese
- 1 7 oz jar roasted red peppers, drained <-- she called for 14 oz but yow that's a lot of peppers
- 1 15 oz can artichoke hearts in water, drained and quartered
- 1 C chopped giardiniera (pickled vegetables) <-- the giardiniera in the olive bar was WAY too intense for me, and the store didn't have the jarred brand that I usually buy, so I skipped this and didn't miss it
- juice of one lemon <-- or a few teaspoons of balsamic vinegar
- salt and pepper to taste
- extra virgin olive oil, for drizzling
- 3 C mixed greens, baby spinach, etc.
DIRECTIONS
Cut the top off a loaf of crusty bread. Hollow out the inside of the bread.
Mix parsley, sun-dried tomatoes, olives, and pesto. Spread the mixture evenly across the bottom of the hollowed-out bread. Layer the cheese into the loaf. Layer the roasted peppers on top of the cheese. Coarsely chop the artichoke hearts and add them in in a layer over the red peppers. Sprinkle in the pickled vegetables (if using). Coat the greens with lemon/balsamic, salt, and pepper and a generous drizzle of olive oil. Pile the greens on top of the filled loaf and replace the top. Cut the stuffed loaf into pieces and serve. This makes four giant servings or six sane ones.
