Plumbers stopped by this afternoon, and coincidentally I made a pie (an explanation for this sentence is here).
I had four peaches ripening on the counter in a paper bag, which is really not enough fruit for a proper pie, so I added a handful of frozen blueberries. While I was worried that their juices might combine to make an unattractive filling, I love the way this looks. Yellow to orange to red to purple is one of my favorite areas of the color wheel.
Since it's so hot and humid, I didn't want to fiddle around with a top and bottom crust, so I made a crostada.
This is more of a rustic tart; you roll out a disc of dough, flop it into the pan, fill it with fruit, and fold the rest of the crust into the middle. I used my standard pie recipe (again, here).
I think the most interesting thing about this crostada is...the hole in the center looks remarkably like Australia.
