Just in case you read comments on old entries, here goes:

The tip I learned from a chef I once randomly encountered is to make the water taste as salinated as ocean water. In other words, really salty.

I recently did this for the first time when cooking some soba noodles, and the difference was miraculous. I'm not a huge fan of pastas OR potatoes in general (gnocci being the beloved exception) but the taste was so vastly improved with the extra-salty water that I might just have to shorten my list of foods I feel "meh" about.
